Low Carb Waffle Recipe | My Montana Kitchen (1)

A single serve, fuel pull, low carb waffle, perfect for when you want a lighter meal.

I just recently ran a Fuel Cycle Challenge through Facebook Messenger, and I was so pleased with the results (more on that coming later). But a Fuel Cycle forced me to think outside the box a little bit.

If you are not familiar with a Fuel Cycle, you can read chapter 24 in the Trim Healthy Mama Plan Book, but it includes 2 full days of only Fuel Pull meals/snacks.

I believe it was on my first day of FP that I came up with this waffle. (Fuel Pull means it is low in both carbs and fats.)

The Trim Healthy Mama Baking Blend makes so many things possible - I love that blend! Their Baking Blend is the base for this waffle, which enables it to be a Fuel Pull!

Today I went back and tweaked it a little more - and I’m quite pleased with the result! Now, I’m pretty sure I already know a few of the questions that will be asked:

Is it crispy?

Is it eggy?

What do I put on it?

I’m so glad you asked all of those questions!

First of all, it is a “little” bit crispy when it first comes out of the waffle maker, but it softens a bit as it sits.

But I am happy to report that it is NOT eggy at all!

It is a bit dense, and could lean a little bit to the dry side (and doesn't have much flavor on its own), which is why I recommend you load it up with toppings! (That’s what I like to do!)

If you want to stay in Fuel Pull mode, you can use a syrup like this Simple Maple Syrup, or spread a layer of nonfat Greek Yogurt and fresh berries over the top.

Or you can make a simple berry syrup (microwave berries and sweetener until they begin to burst, then mash).

You could even top it with fresh sliced strawberries and drizzle with Handy Chocolate Syrup (page 479, Trim Healthy Mama Cookbook) for a special treat!

Or, if you do not mind turning your waffle into an S Fuel, you can slather on some natural peanut butter! (Surely I’m not the only one that loves peanut butter on my waffles and pancakes?)

However, if you want to use the Peanut Junkie Butter (page 481, Trim Healthy Mama Cookbook), you can have your peanut butter and still stay in Fuel Pull mode!

There are 15 grams of both protein and fiber in one of these waffles, so they are very filling!

I am so excited to add this low carb waffle recipe to my menu rotation!

So what do you need for this Low Carb Waffle?

⅓ Cup Trim Healthy Mama Baking Blend

1 Teaspoon Baking Powder

1 Teaspoon Gentle Sweet (or any similar sweetener)

Sprinkle of Cinnamon

Dash of Salt

¼ Cup Liquid Egg Whites

2 Tablespoons Water

Instructions

  • Preheat your waffle maker.

  • In a medium mixing bowl, mix all the dry ingredients together.

  • Add liquid ingredients and mix well with a fork.

  • Spray your waffle maker with non-stick spray, and pour batter into waffle maker. (You may need to spread it out a bit.)

  • Cook for 4 minutes (this is a few seconds past when the green light comes on with my waffle maker).
