How to Make Divinity Candy Recipe
Use parchment paper to line baking sheets.
Prepare a medium heavy saucepan and add a candy thermometer to the pan.
Add the sugar, corn syrup, and water to the pan and heat on medium until the ingredients meet a hardball stage. The temperature will reach 250-260 degrees F.
While your ingredients are cooking, begin to beat the egg whites to form stiff peaks.
Once the sugar is at the right temperature, take away from the heat and gradually add to your egg whites, on high speed, whip continuously.
Pour in the vanilla and beat again until the candy starts to hold its shape. You will do this for about 10-15 minutes.
Before use, spray the cookie scoop, then arrange scoops of dough onto the baking sheets.
Add your desired garnish right after, I used pecans.
You will need to let the candy dry and harder for several hours or overnight for the best results.
Then, store the rest of the candy in an airtight container for up to 2 weeks.
How do I Store Divinity Candy?
You will need to store the Divinity Candy correctly for it to last the longest. Store this candy a couple of different ways. You can store in an airtight container, Ziploc bag or wrap tightly in plastic wrap.
How Long Does it Take for Divinity to Harden?
It can take several hours for the Divinity candy to harden. You will want to give it enough time for the best results. I like to plan on giving it overnight to set and harden before enjoying it.

Notes
The time will depend on your mixer. I found it best to beat on high speed for 5 minutes and then let the mixture and mixer rest for 2-3 minutes. Then repeat several times
In a meringue, the sugar syrup is cooked to about 240°F or until the sugar forms a soft, malleable ball when a spoonful is dropped in cold water. For divinity, the sugar is taken a bit further to 250°F (or the firm ball stage) where it can hold more structure.
The big difference is the way the ingredients are processed. With divinity, you slowly add all the hot syrup at one time, beating it into the beaten egg whites. With nougat, you add part of the hot syrup which has been brought to one temperature, then add the rest which has been brought to another temperature.
Divinity is a confection made from egg whites, corn syrup, and sugar. It's similar to nougat, fudge, or marshmallow. Tip: replace the sugar with brown sugar to create "sea foam." Other ingredients can be used to give the candy other tastes, like chopped dried fruit and chopped nuts.
Divinity candy can be stored in an airtight container at room temperature for up to 2 weeks. It can also be stored in the refrigerator for up to 1 month. If you are storing divinity candy in the refrigerator, let it come to room temperature before cutting it into squares.
Divinity is a candy that is primarily made only around the Christmas holidays in the South. There are a number of reasons for that, the primary one being Southern weather, particularly in the Deep South where humidity rules the atmosphere most of the time. Humidity equals wet, and wet equals candy that often won't set.
Corn Syrup – This is added to stop the sugar from crystalizing giving you a very smooth, chewy texture that's not grainy. Sugar – White granulated sugar is the best for this recipe, avoid brown sugar or it'll affect both the taste and look of the divinity.
It's best to make divinity on a cool, dry day. If it's humid (over 50%) or rainy, the candy might end up with a more gooey, or grainy texture. If you're making candy on a hot or humid day, cook the candy a few degrees higher than the recipe specifies to overcome these undesired side effects.
There are three main types of nougat: white, brown, and viennese. White nougat, the most common variety, is likely what you're familiar with. It's made with beaten egg whites, sugar or honey, and sometimes other ingredients to add flavor and texture (such as nuts and candied fruits).
How do you store divinity candy? Improper storing is one of our top five candy-making mistakes. To ensure it stays fresh, store your divinity candy in an airtight container in a cool, dry place for up to two weeks.
I usually test it once at 15 minutes and then every minute or so after until the candy is ready to go. You don't want to over beat the candy. This results in brittle candy that is crumbly – not what you want. True divinity has a pillowy soft, chewy center that is in a word, divine.
Most candies will keep 2 to 3 weeks (if not longer) if stored tightly covered in a cool, dry place or in the refrigerator. It's best to avoid storing different types of candy together in the same container because hard candies will become soft and sticky, and soft candies will dry out.
Divinity will be best when eaten within two weeks. After that it will harden too much and won't be as delectable. Store at room temperature in an airtight container or you can freeze up to two months.

The basic difference is consistency: meringue tends to be lighter, airier, and drier, while nougat is more chewy. This is achieved by different ratios of sugar to egg whites. Nougat has significantly more sugar in proportion to egg whites.

Old fashioned divinity is a vintage recipe for a meringue-based candy that I would describe as somewhere between fudge (even though there is no chocolate in most divinity, it is often even referred to as Divinity Fudge), nougat, and marshmallow.
